The finished wine is fined with egg white, cold-stabilized, but not filtered before bottling. A small amount of carbonic takes place from the whole clusters. Aged in neutral French oak for 6 weeks. Bottled unfiltered and ready to drink now.

    Tasting Notes ~ ‘Ojo Gallo’, Castellano for ‘rooster eye’ (in other words, what the French call ‘oeil de perdrix’), hearkens back to the traditional clarete style of the region. This light red is a field blend of very old vines of Tempranillo, Garnacha, Bobal, Monastrell, Viura, Albillo and Malvasia co-fermented in cement and raised for 8 months in used barrels before bottling without added sulfur for peak drinkability. Aromas of cranberry, wild cherry, scrub herb, and flowers jump from the glass, with a juicy palate offering prickly acidity and a wisp of tannic dryness. Absolutely delicious with a chill, though it can easily be enjoyed closer to room temperature.

    Vinous 91 ~ The Foradori Teroldego always makes for a wonderful introduction to the brand. In fact, it was a vertical tasting of the Teroldego, a wine created in a fresh style from younger vines, yet still noble and age-worthy, that first won my heart - not the top-shelf Granato. The 2018 is no different. Here I’m finding a display of wild berry, fresh peppery herbs, violets, and crushed stone. It’s silky in texture, complemented by cool-toned red fruits and minerals, with just a hint of round tannin that provides grip. Inner florals resonate, while residual acids pinch at the taste buds. This is perfectly balanced, wonderfully pleasing today yet able to mature over the medium term in a cold cellar.

    Robert Parker's Wine Advocate 96 ~ The 2013 Arcanum is a blend of 73% Cabernet Franc with smaller parts Merlot and Cabernet Sauvignon. The Cabernet Franc element is obviously strongest, and you get steely notes of black fruit follow by wild sage and rosemary oil. This is a powerful and thickly layered red wine that pushes the boundaries of extract and intensity, especially for a Tuscan red wine. Off the top of my head, I can count maybe ten wines from the region that take on such a full-bodied and opulent approach. This wine should age forward for many years to come.

Licorice and flowers dominate the bouquet, and its beautiful red fruit is generous throughout. This wine has always been a beauty and consistently has had a high price tag to reflect that quality, going back to the first vintages of the 1990s. It has regularly sold for about $200 every year for the last decade. These vines are old, some of them very old (reaching the ripe age of 60 years old in 1990s, when many of them were replanted with carefully selected clones), producing an elegance and concentration that brings intensity and a high standard of aromas. This Barolo without a doubt shows its pedigree and a quality of noble perfumes that demonstrate characteristics of the greatest Nebbiolo vintages, all delivered with excellent concentration. The magic lingers on the palate, right up to the finish.
